For the Rolls:

  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/4 cup coconut sugar (or granulated sugar)
  • 1 teaspoon salt
  • 1 cup warm water (about 110°F or 43°C)
  • 1/4 cup vegetable oil (or melted coconut oil)

Instructions

Prepare the Dough

  1. Activate the Yeast: In a small bowl, combine warm water and coconut sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes, until it becomes frothy.
  2. Mix Dry Ingredients: In a large mixing bowl, combine all-purpose flour, whole wheat flour, and salt. Stir to combine.
  3. Combine Ingredients: Pour the yeast mixture and vegetable oil into the dry ingredients. Mix until a soft dough forms.
  4. Knead the Dough: Turn the dough onto a floured surface and knead for about 5-7 minutes, until smooth and elastic.

Let the Dough Rise

  1. First Rise: Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm area for about 1 hour or until it doubles in size.

Shape the Rolls

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Shape the Rolls: Punch down the risen dough and divide it into 12 equal pieces. Shape each piece into a ball and place them on a greased baking sheet, leaving some space between each roll.
  3. Second Rise: Cover the shaped rolls with a towel and let them rise for an additional 30 minutes.

Bake the Rolls

  1. Bake: Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown on top.
  2. Cool: Remove from the oven and allow the rolls to cool on a wire rack for a few minutes before serving.
