For the Greens:
- 1 bunch collard greens, washed and chopped
- 1 bunch mustard greens, washed and chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil (or butter for extra richness)
- 1 tsp red pepper flakes (optional, for heat)
- 1 cup vegetable broth (or chicken broth for more flavor)
- Salt and pepper, to taste
Instructions
Prepare the Greens
- Wash and Chop: Wash the collard and mustard greens thoroughly to remove any dirt or grit. Chop them into bite-sized pieces.
- Sauté the Onions and Garlic: In a large pan, heat the olive oil (or butter) over medium heat. Add the diced onions and cook until they become translucent, about 5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Add the Greens: Gradually add the chopped greens to the pan, stirring as you go. The greens will wilt as they cook.
- Season: Add the red pepper flakes (if using), salt, and pepper. Stir to combine.
- Simmer: Pour in the vegetable broth (or chicken broth) and bring to a simmer. Cover the pan and let the greens cook for 10-15 minutes, stirring occasionally, until they’re tender.
- Taste and Adjust: Taste the greens and adjust the seasoning if necessary. Add more salt, pepper, or red pepper flakes to suit your preference.
