Instructions
Prepare the Chicken
- Season the Chicken: Start by seasoning the chicken breasts with smoked paprika, cumin, chili powder, garlic powder, salt, and pepper. Drizzle with olive oil and toss to coat evenly.
- Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the seasoned chicken breasts and cook for about 6-7 minutes per side, or until fully cooked through.
- Rest and Slice: Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes. Then, slice the chicken into thin strips. Drizzle the lime juice over the sliced chicken for a fresh, tangy finish.
Make the Southwest Dressing
- Combine Ingredients: In a small bowl, whisk together Greek yogurt, olive oil, lime juice, honey, smoked paprika, salt, and pepper until smooth and well combined.
- Adjust Flavor: Taste the dressing and adjust the seasoning if needed. Add more lime juice for tang, or a little honey for sweetness.
Assemble the Wraps
- Warm the Tortillas: Warm your tortillas in a dry skillet or microwave for about 15 seconds to make them pliable.
- Layer the Ingredients: On each tortilla, start by adding a layer of shredded lettuce. Then, top with sliced chicken, diced tomatoes, red onions, shredded cheese, avocado slices, and fresh cilantro.
- Drizzle with Dressing: Spoon a generous amount of the Southwest dressing over the fillings. Be sure to add just enough to coat everything without soaking the tortilla.
- Roll Up the Wraps: Carefully fold in the sides of the tortilla and then roll it up tightly from the bottom to enclose the fillings. Slice the wrap in half at a diagonal for a more appealing presentation.
