For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon lime juice

For the Wraps:

  • 4 whole wheat or flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced

For the Southwest Dressing:

  • 1/2 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

Prepare the Chicken

  1. Season the Chicken: Start by seasoning the chicken breasts with smoked paprika, cumin, chili powder, garlic powder, salt, and pepper. Drizzle with olive oil and toss to coat evenly.
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the seasoned chicken breasts and cook for about 6-7 minutes per side, or until fully cooked through.
  3. Rest and Slice: Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes. Then, slice the chicken into thin strips. Drizzle the lime juice over the sliced chicken for a fresh, tangy finish.

Make the Southwest Dressing

  1. Combine Ingredients: In a small bowl, whisk together Greek yogurt, olive oil, lime juice, honey, smoked paprika, salt, and pepper until smooth and well combined.
  2. Adjust Flavor: Taste the dressing and adjust the seasoning if needed. Add more lime juice for tang, or a little honey for sweetness.

Assemble the Wraps

  1. Warm the Tortillas: Warm your tortillas in a dry skillet or microwave for about 15 seconds to make them pliable.
  2. Layer the Ingredients: On each tortilla, start by adding a layer of shredded lettuce. Then, top with sliced chicken, diced tomatoes, red onions, shredded cheese, avocado slices, and fresh cilantro.
  3. Drizzle with Dressing: Spoon a generous amount of the Southwest dressing over the fillings. Be sure to add just enough to coat everything without soaking the tortilla.
  4. Roll Up the Wraps: Carefully fold in the sides of the tortilla and then roll it up tightly from the bottom to enclose the fillings. Slice the wrap in half at a diagonal for a more appealing presentation.
