  • 4 boneless, skinless chicken breasts
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon poultry seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 8 cups low-sodium chicken broth
  • 12 oz egg noodles (or homemade noodles)

Instructions

1️⃣ Prepare the Chicken Base
Place the chicken breasts at the bottom of your slow cooker.
Sprinkle with salt, black pepper, poultry seasoning, dried thyme, and parsley.

2️⃣ Add Vegetables & Broth
Add the garlic, diced onion, sliced carrots, and chopped celery.
Pour in the chicken broth to cover everything completely.

3️⃣ Slow Cook Until Tender
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is fully cooked and easy to shred.

4️⃣ Shred the Chicken
Remove the chicken breasts from the slow cooker.
Shred the meat using two forks, then return the shredded chicken back to the soup.

5️⃣ Add the Noodles
Stir in the egg noodles.
Continue cooking on HIGH for an additional 15–20 minutes until the noodles are tender.

 

6️⃣ Your Soup Is Ready!
Ladle into bowls and garnish with fresh parsley if desired.
