Instructions
Prepare the Cake Layers
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
- Make the Dough: In a small saucepan, combine the honey, sugar, butter, and milk. Heat over medium heat until the sugar dissolves, stirring constantly. Remove from heat and allow to cool slightly.
- Mix the Eggs and Dry Ingredients: In a large mixing bowl, whisk together the flour, baking soda, and salt. Add the eggs, vanilla extract, and the cooled honey mixture to the dry ingredients. Stir until everything is well combined into a smooth dough.
- Roll the Dough: Divide the dough into 6 equal portions. Roll each portion into a thin circle, roughly 8 inches in diameter. Place them on the prepared baking sheet and bake each layer individually for 5-7 minutes or until golden brown. Keep an eye on them as they bake quickly.
- Cool the Layers: Once the layers are baked, remove them from the oven and let them cool completely on a wire rack.
Prepare the Cream Filling
- Mix the Cream: In a medium-sized bowl, whisk together the sour cream, powdered sugar, vanilla extract, and honey until smooth and thickened. If you want a lighter filling, you can fold in some heavy cream for extra fluffiness.
- Chill the Cream: Place the cream mixture in the refrigerator while you assemble the cake.
Assemble the Cake
- Layer the Cake: Once all the layers have cooled, place one layer of the cake on a serving platter. Spread a generous amount of the cream filling over the top.
- Continue Layering: Place the next layer of cake on top of the cream, pressing gently to secure it. Repeat this process, alternating between cake layers and cream filling, until all layers are stacked.
- Cover and Chill: After assembling the entire cake, cover it with plastic wrap and refrigerate for at least 1.5 hours (or overnight, if you have the time). This allows the layers to absorb the cream and become beautifully moist and flavorful.
