Instructions

  • Wrap whole beets in foil and place on a baking sheet.
  • Roast for 45–50 minutes, until fork-tender.
  • Let cool, peel, and slice into ½-inch thick rounds.

2️⃣ Caramelize the Pears

  • Heat olive oil in a pan over medium heat.
  • Add pear slices and drizzle with honey.
  • Sauté for 2 minutes per side, until golden.

3️⃣ Assemble the Stacks

  • Place a beet slice as the base.
  • Add a layer of blue cheese and a caramelized pear slice.
  • Repeat the layers, finishing with blue cheese on top.

4️⃣ Garnish & Serve

 

  • Sprinkle with toasted pecans and fresh thyme.
  • Drizzle with balsamic glaze for a rich, tangy finish.
