  • Author: Christine
  • Total Time: 7 hours

Ingredients

Scale

For the Crust:

  • 2 cups graham cracker crumbs (or gluten-free graham crackers, crushed)
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 2 tablespoons all-purpose flour

For the Topping (Optional):

  • Whipped cream
  • Caramel sauce
  • Candied pecans

Instructions

Prepare the Crust

  1. Preheat Oven: Preheat your oven to 325°F (160°C).
  2. Mix Ingredients: Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix until the crumbs are evenly coated.
  3. Press Into Pan: Press the mixture into the bottom of a 9-inch springform pan, creating an even layer.
  4. Bake and Cool: Bake the crust for 8-10 minutes, then remove from the oven and let it cool.

Make the Filling

  1. Beat Cream Cheese: In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  2. Add Sugar and Pumpkin: Mix in the sugar and pumpkin puree until well blended.
  3. Incorporate Eggs: Add eggs one at a time, mixing on low speed to avoid overbeating.
  4. Add Spices and Flour: Stir in the vanilla extract, spices, and flour until just combined.

Assemble and Bake

  1. Pour Filling: Pour the pumpkin cheesecake filling over the cooled crust, smoothing the top with a spatula.
  2. Water Bath: Wrap the bottom of the springform pan in foil and place it in a larger baking dish. Fill the dish with hot water to reach halfway up the sides of the pan.
  3. Bake: Bake the cheesecake in the preheated oven for 55-65 minutes, or until the center is set but slightly jiggly.

Cool and Chill

  1. Cool Slowly: Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour.
  2. Refrigerate: Cover and refrigerate for at least 5 hours or overnight for the best texture.

Decorate and Serve

  1. Add Toppings: Before serving, top with whipped cream, caramel drizzle, or candied pecans for an elegant touch.
  2. Slice and Enjoy: Use a sharp knife to cut clean slices, wiping the blade between cuts for a perfect presentation.
