For the Crust:

  • 1 ½ cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Pumpkin Filling:

  • 1 can (15 oz) pure pumpkin puree
  • 1 can (14 oz) sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

Prepare the Crust

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper for easy removal.
  2. Mix the Crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until well combined and crumbly.
  3. Press into Dish: Press the mixture evenly into the bottom of the prepared baking dish to form a crust.
  4. Bake the Crust: Bake in the preheated oven for 8-10 minutes or until lightly golden. Remove from oven and let cool slightly.

Prepare the Pumpkin Filling

  1. Mix the Filling: In a large mixing bowl, combine pumpkin puree, sweetened condensed milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Whisk until smooth and well blended.
  2. Pour Filling Over Crust: Pour the pumpkin filling over the baked crust, spreading it evenly.

Bake the Bars

  1. Bake: Return to the oven and bake for an additional 35-40 minutes or until the filling is set and a toothpick inserted in the center comes out clean.
  2. Cool: Remove from the oven and allow to cool in the baking dish for about 10 minutes before transferring to a wire rack to cool completely.
