For the Mushroom Pizzas:

  • 4 large Portobello mushrooms
  • 1 cup marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • 1 cup sliced bell peppers (any color)
  • 1/2 cup sliced black olives (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

Prepare the Mushrooms

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Clean the Mushrooms: Wipe the Portobello mushrooms with a damp cloth to remove any dirt. Remove the stems and scoop out the gills with a spoon to create space for the toppings.
  3. Season the Caps: Place the mushrooms gill-side up on a baking sheet. Drizzle with olive oil and season with salt, pepper, garlic powder, and dried oregano.

Assemble the Pizzas

  1. Add Sauce: Spoon marinara sauce evenly into each mushroom cap, covering the bottom.
  2. Layer Toppings: Top with shredded mozzarella cheese, sliced bell peppers, and olives if using.

Bake

  1. Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve

  1. Garnish: Remove from the oven and garnish with fresh basil if desired.
