Pesto Whole Chicken

For the Chicken:

  • 1 whole chicken (about 45 pounds)
  • 1 cup pesto (store-bought or homemade)
  • Salt and pepper to taste
  • 1 lemon, quartered
  • 4 garlic cloves, smashed

Instructions

Prepare the Chicken

  1. Preheat Oven: Preheat your oven to 425°F (220°C).
  2. Season the Chicken: Rinse the chicken under cold water and pat it dry with paper towels. Season the inside and outside with salt and pepper.
  3. Stuff the Chicken: Place the quartered lemon and smashed garlic cloves inside the cavity of the chicken.
  4. Apply the Pesto: Spread the pesto evenly over the entire surface of the chicken, making sure to cover it well.

Roast the Chicken

  1. Prepare for Roasting: Place the chicken breast-side up in a roasting pan or on a baking sheet.
  2. Roast: Roast in the preheated oven for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
  3. Rest: Remove the chicken from the oven and let it rest for about 10-15 minutes before carving.
