For the Chicken:
- 1 whole chicken (about 4–5 pounds)
- 1 cup pesto (store-bought or homemade)
- Salt and pepper to taste
- 1 lemon, quartered
- 4 garlic cloves, smashed
Instructions
Prepare the Chicken
- Preheat Oven: Preheat your oven to 425°F (220°C).
- Season the Chicken: Rinse the chicken under cold water and pat it dry with paper towels. Season the inside and outside with salt and pepper.
- Stuff the Chicken: Place the quartered lemon and smashed garlic cloves inside the cavity of the chicken.
- Apply the Pesto: Spread the pesto evenly over the entire surface of the chicken, making sure to cover it well.
Roast the Chicken
- Prepare for Roasting: Place the chicken breast-side up in a roasting pan or on a baking sheet.
- Roast: Roast in the preheated oven for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
- Rest: Remove the chicken from the oven and let it rest for about 10-15 minutes before carving.
- Prep Time: 15 min.
- Cook Time: 1 hr. and 15 min.
