Ingredients

Scale

For the Pie Crust:

  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 34 tablespoons ice water

For the Filling:

  • 1 cup light corn syrup
  • 1 cup brown sugar, packed
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 1/2 cups pecan halves

Instructions

Make the Pie Crust

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Mix Dry Ingredients: In a mixing bowl, combine flour and salt.
  3. Cut in Butter: Add the cubed butter and mix until the mixture resembles coarse crumbs.
  4. Add Ice Water: Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.
  5. Chill the Dough: Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  6. Roll Out: Once chilled, roll out the dough on a floured surface to fit a 9-inch pie plate. Place the rolled dough into the pie plate and trim the edges. Prick the bottom with a fork.

Prepare the Filling

  1. Combine Ingredients: In a mixing bowl, whisk together corn syrup, brown sugar, vanilla extract, salt, and eggs until well combined.
  2. Add Pecans: Stir in the pecan halves until evenly distributed.

Assemble the Pie

  1. Pour Filling: Pour the pecan filling into the prepared pie crust, spreading the pecans evenly.
  2. Bake: Bake in the preheated oven for 50-55 minutes, or until the filling is set and the crust is golden brown.
  3. Cool: Allow the pie to cool at room temperature for at least 2 hours before slicing.
