Instructions
Prepare the Ingredients
- Cut the Chicken: Slice the chicken breasts into thin strips against the grain for tender, juicy pieces.
- Peel and Dice the Mango: Cut the mango into small cubes. Be sure to remove the pit before chopping.
- Slice the Vegetables: Julienne the red and yellow bell peppers, and thinly slice the red onion. Trim the snap peas.
- Prepare the Sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes (if using). In another small bowl, mix cornstarch and water to create a slurry for thickening the sauce.
Cook the Chicken
- Heat the Pan: In a large skillet or wok, heat the olive oil over medium-high heat.
- Cook the Chicken: Add the chicken strips to the pan and cook for 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the pan and set it aside.
