For the Ham:

  • 1 fully cooked bone-in ham (about 810 pounds)

For the Honey Glaze:

  • 1 cup honey
  • 1/2 cup brown sugar
  • 1/4 cup Dijon mustard
  • 1/4 cup apple cider vinegar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon black pepper

Instructions

Prepare the Ham

  1. Preheat Oven: Preheat your oven to 325°F (165°C).
  2. Score the Ham: Place the ham on a roasting rack in a large roasting pan. Using a sharp knife, score the surface of the ham in a diamond pattern, making shallow cuts about 1 inch apart.
  3. Cover and Bake: Tent the ham with aluminum foil and bake in the preheated oven for 1 hour.

Make the Honey Glaze

  1. Combine Ingredients: In a medium saucepan, combine honey, brown sugar, Dijon mustard, apple cider vinegar, cinnamon, cloves, and black pepper.
  2. Heat the Glaze: Cook over medium heat, stirring until the sugar dissolves and the mixture is well combined. Bring to a simmer and cook for an additional 2-3 minutes.

Glaze the Ham

  1. Remove Foil: After 1 hour, remove the ham from the oven and discard the foil.
  2. Brush on Glaze: Generously brush the honey glaze all over the ham, ensuring the glaze seeps into the scored cuts.
  3. Continue Baking: Return the ham to the oven and bake uncovered for an additional 45 minutes to 1 hour, basting with the glaze every 15-20 minutes, until the internal temperature reaches 140°F (60°C).
