Instructions
Prepare the Ingredients
- Peel and Dice the Sweet Potatoes: Start by peeling and dicing your sweet potatoes into small cubes (about 1/2 inch thick). This will help them cook quickly and evenly in the skillet.
- Dice the Veggies: Chop the onion and bell pepper (if using) into small pieces, and mince the garlic. Set them aside for later use.
Cook the Ground Beef
- Heat the Skillet: Place a large skillet over medium heat and add 1 tablespoon of olive oil.
- Brown the Ground Beef: Once the skillet is hot, add the ground beef. Use a wooden spoon to break it apart and cook until it’s browned, about 5-7 minutes. Stir occasionally to ensure it cooks evenly.
- Season the Beef: Once the beef is cooked, sprinkle in the paprika, cumin, chili powder, salt, and pepper. Stir to coat the beef evenly with the spices.
Cook the Sweet Potatoes and Veggies
- Sauté the Veggies: Remove the beef from the skillet and set it aside. In the same skillet, add a little more olive oil if needed. Sauté the diced onion, bell pepper, and garlic for about 3-4 minutes until softened and fragrant.
- Add the Sweet Potatoes: Toss the diced sweet potatoes into the skillet with the sautéed veggies. Stir everything together and cook for 5 minutes, allowing the potatoes to slightly brown.
- Add the Beef Broth: Pour in the beef broth and bring it to a simmer. Cover the skillet and let the sweet potatoes cook for 10-15 minutes, stirring occasionally. You want them tender but still holding their shape.
Combine and Finish
- Return the Beef: Once the sweet potatoes are tender, add the browned ground beef back to the skillet. Stir everything together and cook for an additional 5 minutes to let the flavors meld.
- Taste and Adjust: Taste the mixture and adjust the seasoning if needed, adding more salt, pepper, or spices as desired.
- Garnish: For a fresh touch, sprinkle some chopped parsley over the top before serving.
