  • 2 medium sweet potatoes, peeled and diced
  • 1 medium onion, diced
  • 1 bell pepper, diced (optional for extra color and crunch)
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder (adjust based on spice preference)
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/4 cup beef broth (or water)
  • Fresh parsley (optional for garnish)

Instructions

Prepare the Ingredients

  1. Peel and Dice the Sweet Potatoes: Start by peeling and dicing your sweet potatoes into small cubes (about 1/2 inch thick). This will help them cook quickly and evenly in the skillet.
  2. Dice the Veggies: Chop the onion and bell pepper (if using) into small pieces, and mince the garlic. Set them aside for later use.

Cook the Ground Beef

  1. Heat the Skillet: Place a large skillet over medium heat and add 1 tablespoon of olive oil.
  2. Brown the Ground Beef: Once the skillet is hot, add the ground beef. Use a wooden spoon to break it apart and cook until it’s browned, about 5-7 minutes. Stir occasionally to ensure it cooks evenly.
  3. Season the Beef: Once the beef is cooked, sprinkle in the paprika, cumin, chili powder, salt, and pepper. Stir to coat the beef evenly with the spices.

Cook the Sweet Potatoes and Veggies

  1. Sauté the Veggies: Remove the beef from the skillet and set it aside. In the same skillet, add a little more olive oil if needed. Sauté the diced onion, bell pepper, and garlic for about 3-4 minutes until softened and fragrant.
  2. Add the Sweet Potatoes: Toss the diced sweet potatoes into the skillet with the sautéed veggies. Stir everything together and cook for 5 minutes, allowing the potatoes to slightly brown.
  3. Add the Beef Broth: Pour in the beef broth and bring it to a simmer. Cover the skillet and let the sweet potatoes cook for 10-15 minutes, stirring occasionally. You want them tender but still holding their shape.

Combine and Finish

  1. Return the Beef: Once the sweet potatoes are tender, add the browned ground beef back to the skillet. Stir everything together and cook for an additional 5 minutes to let the flavors meld.
  2. Taste and Adjust: Taste the mixture and adjust the seasoning if needed, adding more salt, pepper, or spices as desired.
  3. Garnish: For a fresh touch, sprinkle some chopped parsley over the top before serving.
