For the Chicken Marinade:

  • 3 garlic cloves, minced

  • ¼ teaspoon black pepper

For the Salad:

  • 6 cups mixed greens (e.g., arugula, spinach, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1 red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup toasted almonds or sunflower seeds
  • 1 avocado, sliced (optional)

For the Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

Prepare the Marinade and Chicken

  1. Make the Marinade: In a bowl, whisk together olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper.
  2. Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over them, ensuring they are well-coated. Let it marinate for at least 20 minutes (or up to 4 hours for deeper flavor).
  3. Preheat the Grill: Heat your grill or grill pan to medium-high heat.

Grill the Chicken

  1. Cook the Chicken: Grill the chicken breasts for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).
  2. Let it Rest: Remove the chicken from the grill and let it rest for 5 minutes before slicing into thin strips.

Prepare the Salad

  1. Assemble the Greens: In a large bowl or platter, spread the mixed greens as the base.
  2. Add the Veggies: Scatter the cherry tomatoes, cucumber slices, and red onion on top of the greens.
  3. Add Protein and Toppings: Arrange the grilled chicken slices on top and sprinkle with crumbled feta and almonds.

Make the Dressing
