Ingredients
Scale
For the Snack Mix:
- 6 cups gluten-free rice Chex cereal
- 1 cup peanut butter (smooth or chunky)
- 1 cup semi-sweet chocolate chips
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- 1 1/2 cups powdered sugar (for coating)
Optional Garnishes:
- Red and green M&Ms (for extra holiday color)
- Sprinkles or holiday-themed candies for fun
Instructions
Melt the Chocolate and Peanut Butter
- Melt the Peanut Butter and Chocolate: In a medium saucepan, melt the peanut butter, semi-sweet chocolate chips, and unsalted butter over low heat, stirring frequently until smooth. Once melted, remove the saucepan from heat and stir in the vanilla extract.
Coat the Cereal
- Prepare the Cereal: In a large mixing bowl, pour in the gluten-free rice Chex cereal.
- Mix Together: Pour the peanut butter and chocolate mixture over the cereal. Gently toss to coat each piece evenly, making sure all the cereal is covered with the chocolate-peanut butter goodness.
Coat with Powdered Sugar
- Add Powdered Sugar: Transfer the coated cereal into a large resealable plastic bag or another large bowl. Add the powdered sugar and shake or stir until the cereal is fully coated with the sugar.
Chill the Chow
- Let it Set: Spread the coated cereal onto a baking sheet or large tray to cool and set for about 10 minutes. This allows the coating to harden, giving your chow that delicious crunchy texture.
Garnish and Serve
- Add Festive Touches: If desired, sprinkle M&Ms, holiday sprinkles, or small candy pieces over the top of the chow for an extra pop of color and sweetness.
- Serve: Once set, serve the Reindeer Chow in a festive bowl or package it up in cute gift bags for friends and family.
