For the Cheesecake Center:

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1 cup crushed gingersnap cookies (about 12 cookies)

For the Coating:

  • 1 cup crushed gingersnap cookies (for rolling)
  • 1/2 cup white chocolate chips (optional, for drizzling)

Instructions

Prepare the Cheesecake Center

  1. Blend the Ingredients: In a medium-sized mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar, vanilla extract, cinnamon, and ground ginger. Mix until fully combined and creamy.
  2. Add Crushed Gingersnaps: Gently fold the crushed gingersnap cookies into the cream cheese mixture, ensuring the crumbs are evenly distributed.

Shape the Truffles

  1. Form the Truffles: Using your hands or a small cookie scoop, form small balls (about 1-inch in diameter) from the cheesecake mixture. Place them on a parchment-lined baking sheet or plate.
  2. Chill: Pop the truffles into the freezer for about 30 minutes to firm up. This will make them easier to coat.

Coat the Truffles

  1. Crush Gingersnaps: While the truffles are chilling, crush the remaining gingersnap cookies (you can use a food processor or place them in a zip-top bag and crush with a rolling pin).
  2. Roll the Truffles: Once the truffles have firmed up, roll each one in the crushed gingersnap cookies until they are fully coated. Place them back on the baking sheet.

Optional White Chocolate Drizzle

  1. Melt White Chocolate: If you’d like to add a little extra sweetness, melt the white chocolate chips in the microwave in 30-second intervals, stirring in between.
  2. Drizzle the Chocolate: Drizzle the melted white chocolate over the coated truffles for a decorative and delicious finishing touch.

Chill Again

  1. Let Set: Once your truffles are coated and drizzled, return them to the freezer for about 15-20 minutes to let the chocolate set and the truffles firm up.
