  • 2 heads of garlic, peeled and minced (or 1214 garlic cloves)
  • 1 medium onion, diced
  • 4 cups vegetable or chicken broth (depending on your preference)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1/2 cup heavy cream (optional for a creamier texture)
  • Fresh parsley, chopped (for garnish)

Instructions

Prepare the Garlic and Onion

  1. Mince the Garlic: Begin by peeling and mincing the garlic cloves. The more garlic, the better – don’t be shy with it!
  2. Dice the Onion: Next, dice the onion into small pieces. The onion will provide a savory base for the soup that complements the garlic perfectly.

Sauté the Garlic and Onion

  1. Heat the Olive Oil: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for 3-5 minutes, until it becomes soft and translucent.
  2. Add the Garlic: Add the minced garlic to the pot and cook for an additional 2-3 minutes, stirring occasionally. Be sure not to burn the garlic – it should soften and become aromatic, but not browned.

Simmer the Soup

  1. Add the Broth: Pour the vegetable or chicken broth into the pot with the garlic and onion mixture. Stir to combine.
  2. Add the Herbs: Toss in the dried thyme, bay leaf, salt, and pepper. Stir again and bring the soup to a gentle simmer.
  3. Simmer for 30 Minutes: Let the soup simmer on low heat for about 30 minutes. This will allow the flavors to develop and the garlic to infuse the broth.

Finish the Soup

  1. Add the Cream (Optional): After the soup has simmered, you can stir in the heavy cream for added richness and creaminess. If you prefer a lighter soup, you can skip this step or use a lighter cream.
  2. Taste and Adjust: Taste the soup and adjust the seasoning with more salt, pepper, or thyme as needed.

Serve and Garnish

  1. Serve: Ladle the garlic soup into bowls and garnish with freshly chopped parsley for a pop of color and freshness.
