For the Chicken Bites:

  • 2 pounds chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

For the Garlic Butter Sauce:

  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced (or more, if you love garlic!)
  • 1 teaspoon dried thyme (optional for extra flavor)
  • 1 teaspoon dried parsley (optional for garnish)
  • Juice of half a lemon (for a bit of tang)
  • 1 tablespoon chicken broth or water (for extra moisture)
  • Freshly grated Parmesan cheese (optional for serving)

Instructions

Prepare the Chicken Bites

  1. Season the Chicken: Cut your chicken breasts into bite-sized pieces and season generously with salt and pepper.
  2. Heat the Pan: Heat the olive oil in a large skillet over medium-high heat.
  3. Cook the Chicken: Add the chicken pieces to the skillet in a single layer. Sear for 4-5 minutes per side, until golden brown and cooked through. Remove the chicken from the pan and set aside.

Make the Garlic Butter Sauce

  1. Melt the Butter: In the same skillet, reduce the heat to medium and add the butter. Let it melt, swirling the pan to coat evenly.
  2. Add the Garlic: Once the butter is melted, add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant (but not burnt!).
  3. Season the Sauce: Add the dried thyme, parsley, and a squeeze of fresh lemon juice to the sauce. Stir to combine.
  4. Add Chicken Broth: Pour in the chicken broth (or water) to loosen up the sauce and create a smooth, silky texture. Stir well.

Combine and Serve

  1. Return the Chicken: Add the cooked chicken bites back into the skillet, tossing them in the garlic butter sauce to coat evenly.
  2. Simmer: Let the chicken simmer in the sauce for an additional 2-3 minutes to absorb all the flavors.
  3. Finish: If desired, sprinkle with freshly grated Parmesan cheese for a creamy, cheesy touch.
