- Freshly grated Parmesan cheese (optional for serving)
Instructions
Prepare the Chicken Bites
- Season the Chicken: Cut your chicken breasts into bite-sized pieces and season generously with salt and pepper.
- Heat the Pan: Heat the olive oil in a large skillet over medium-high heat.
- Cook the Chicken: Add the chicken pieces to the skillet in a single layer. Sear for 4-5 minutes per side, until golden brown and cooked through. Remove the chicken from the pan and set aside.
Make the Garlic Butter Sauce
- Melt the Butter: In the same skillet, reduce the heat to medium and add the butter. Let it melt, swirling the pan to coat evenly.
- Add the Garlic: Once the butter is melted, add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant (but not burnt!).
- Season the Sauce: Add the dried thyme, parsley, and a squeeze of fresh lemon juice to the sauce. Stir to combine.
- Add Chicken Broth: Pour in the chicken broth (or water) to loosen up the sauce and create a smooth, silky texture. Stir well.
Combine and Serve
- Return the Chicken: Add the cooked chicken bites back into the skillet, tossing them in the garlic butter sauce to coat evenly.
- Simmer: Let the chicken simmer in the sauce for an additional 2-3 minutes to absorb all the flavors.
- Finish: If desired, sprinkle with freshly grated Parmesan cheese for a creamy, cheesy touch.
