For the Sandwiches:

  • 12 croissants (store-bought or homemade)
  • 12 large eggs
  • 1 cup shredded cheddar cheese
  • 12 slices cooked bacon or sausage patties (or a mix of both)
  • Salt and pepper to taste
  • 1 tablespoon butter (for cooking eggs)

Instructions

Prepare the Ingredients

  1. Cook the Meat: If using sausage, cook the patties according to package directions. If using bacon, cook until crispy. Set aside.
  2. Scramble the Eggs: In a large skillet, melt butter over medium heat. Crack the eggs into a bowl, whisk with a little salt and pepper, and pour into the skillet. Scramble the eggs until they are fully cooked and fluffy.
  3. Shred the Cheese: Grate the cheddar cheese if not pre-shredded.

Assemble the Sandwiches

  1. Prepare the Croissants: Slice the croissants in half and place them on a baking sheet.
  2. Layer the Sandwiches: On the bottom half of each croissant, add a scoop of scrambled eggs, a slice of bacon or a sausage patty, and a generous handful of shredded cheese. Top with the other half of the croissant.
  3. Wrap for Freezing: Wrap each sandwich individually in plastic wrap or foil to freeze.

Freezing the Sandwiches

  1. Freeze the Sandwiches: Place the wrapped sandwiches in a freezer-safe bag or airtight container and freeze for up to 3 months.
  2. Reheat: When ready to eat, remove the wrap and heat in the microwave for 1-2 minutes or until heated through. For a crispier texture, you can also reheat in a toaster oven.
