Ingredients
Scale
For the Sandwiches:
- 8 slices of white or whole grain bread (or a bread of your choice)
- 1 medium cucumber (thinly sliced)
- 4 oz cream cheese (softened)
- 2 tbsp mayonnaise
- 1 tbsp fresh dill (chopped, optional)
- 1 tbsp lemon juice (optional)
- Salt and pepper to taste
Instructions
Prepare the Ingredients
- Slice the Cucumber: Start by washing and peeling the cucumber (if you prefer) and slicing it thinly. You want the slices to be thin enough to create that delicate crunch but not too thin that they fall apart.
- Make the Spread: In a small bowl, combine the cream cheese, mayonnaise, dill, and lemon juice (if using). Mix well until smooth and creamy. Add salt and pepper to taste.
- Prepare the Bread: If you’re using a crustless bread, you can trim off the edges with a knife to create a neat, elegant look. Otherwise, you can leave the crusts on for a more rustic feel. Cut the bread into halves or quarters once the sandwiches are assembled.
Assemble the Sandwiches
- Spread the Cream Cheese Mixture: On one side of each slice of bread, spread a generous amount of the cream cheese mixture.
- Layer the Cucumber: Place a few slices of cucumber on top of the spread. Try to overlap them slightly so the cucumber layers form a nice, even surface.
- Assemble the Sandwich: Top with another slice of bread to complete the sandwich. Press down gently to help them stick together.
- Cut and Serve: For a more refined look, cut the sandwiches into triangles or finger-sized portions. You can also cut them into fun shapes using a cookie cutter for a playful twist!
