For the Casserole:
- 1 can (15 oz) sweet corn, drained
- 1 can (15 oz) cream-style corn
- 1 cup sour cream
- 1/2 cup melted butter
- 1 package (8.5 oz) cornbread mix
- 1 cup shredded cheese (cheddar or your choice)
- 1/4 cup chopped green onions (optional)
- Salt and pepper to taste
Instructions
Prepare the Mixture
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Mix Ingredients: In a large mixing bowl, combine sweet corn, cream-style corn, sour cream, melted butter, cornbread mix, and half of the shredded cheese. Stir until well combined. Season with salt and pepper to taste.
- Add Green Onions: If using, fold in the chopped green onions for added flavor.
Bake the Casserole
- Prepare the Baking Dish: Grease a 9×13-inch baking dish or spray it with non-stick cooking spray.
- Pour the Mixture: Transfer the corn mixture into the prepared baking dish and spread it evenly.
- Top with Cheese: Sprinkle the remaining shredded cheese on top.
- Bake: Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
