Ingredients

For the Salad:

  • 4 cups Romaine lettuce, chopped
  • 2 cups mixed greens (spinach, arugula, or spring mix)
  • 1 avocado, sliced
  • 2 chicken breasts, grilled and sliced
  • 4 slices of bacon, cooked and crumbled
  • 2 boiled eggs, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup blue cheese crumbles
  • Salt and pepper, to taste

For the Dressing:

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 small garlic clove, minced
  • Salt and pepper, to taste

Instructions

Prepare the Salad Ingredients

  1. Cook the Chicken: Season your chicken breasts with salt and pepper, then grill them until fully cooked, about 6-8 minutes per side. Once cooked, let the chicken rest for a few minutes, then slice into strips or cubes.
  2. Cook the Bacon: While the chicken is cooking, crisp up your bacon in a pan or oven until golden and crunchy. Once done, crumble it into small pieces.
  3. Boil the Eggs: For perfectly boiled eggs, place them in a pot of cold water and bring to a boil. Once the water boils, reduce the heat and simmer for 10 minutes. Afterward, cool the eggs under cold running water and peel. Chop them into small pieces.
  4. Prepare the Vegetables: Wash and chop the Romaine lettuce and mixed greens, and halve the cherry tomatoes. Slice the avocado and set aside.

Assemble the Salad

  1. Toss the Greens: In a large bowl, combine the Romaine lettuce and mixed greens.
  2. Add the Toppings: Neatly arrange the chicken, bacon, boiled eggs, avocado, tomatoes, and blue cheese on top of the salad base.
  3. Season: Sprinkle with a pinch of salt and pepper to taste, or any other seasonings you like.

Make the Dressing

  1. Whisk Together: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, salt, and pepper until smooth.
  2. Taste and Adjust: Taste the dressing and adjust the seasoning if necessary. Add a bit more honey for sweetness or vinegar for tang.

Serve

  1. Drizzle with Dressing: Drizzle the dressing over the salad just before serving, or serve it on the side so everyone can add their own.
  2. Toss and Enjoy: Gently toss the salad to combine all the flavors, and enjoy!
