For the Salad:
- 4 cups Romaine lettuce, chopped

- 1 avocado, sliced
- 2 chicken breasts, grilled and sliced

- 1 cup cherry tomatoes, halved

For the Dressing:
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 small garlic clove, minced
- Salt and pepper, to taste
Instructions
Prepare the Salad Ingredients
- Cook the Chicken: Season your chicken breasts with salt and pepper, then grill them until fully cooked, about 6-8 minutes per side. Once cooked, let the chicken rest for a few minutes, then slice into strips or cubes.
- Cook the Bacon: While the chicken is cooking, crisp up your bacon in a pan or oven until golden and crunchy. Once done, crumble it into small pieces.
- Boil the Eggs: For perfectly boiled eggs, place them in a pot of cold water and bring to a boil. Once the water boils, reduce the heat and simmer for 10 minutes. Afterward, cool the eggs under cold running water and peel. Chop them into small pieces.
- Prepare the Vegetables: Wash and chop the Romaine lettuce and mixed greens, and halve the cherry tomatoes. Slice the avocado and set aside.
Assemble the Salad
- Toss the Greens: In a large bowl, combine the Romaine lettuce and mixed greens.
- Add the Toppings: Neatly arrange the chicken, bacon, boiled eggs, avocado, tomatoes, and blue cheese on top of the salad base.
- Season: Sprinkle with a pinch of salt and pepper to taste, or any other seasonings you like.
Make the Dressing
- Whisk Together: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, salt, and pepper until smooth.
- Taste and Adjust: Taste the dressing and adjust the seasoning if necessary. Add a bit more honey for sweetness or vinegar for tang.
Serve
- Drizzle with Dressing: Drizzle the dressing over the salad just before serving, or serve it on the side so everyone can add their own.
