For the Chuck Roast:
- 3–4 pounds chuck roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
For the Vegetables:
- 4 medium carrots, chopped
- 3 medium potatoes, diced
- 1 onion, quartered
- 3 cloves garlic, minced
- 2–3 sprigs fresh thyme (or 1 teaspoon dried thyme)
- 2–3 sprigs fresh rosemary (or 1 teaspoon dried rosemary)
Instructions
Prepare the Chuck Roast
- Season the Meat: Pat the chuck roast dry with paper towels. Rub the roast with olive oil, salt, pepper, garlic powder, and onion powder.
- Sear the Roast (Optional): In a large skillet over medium-high heat, sear the roast on all sides until browned (about 3-4 minutes per side). This step enhances the flavor but can be skipped if you’re short on time.
Add Ingredients to Slow Cooker or Oven
- Place the Roast: Transfer the roast to a slow cooker or a large Dutch oven.
- Add Broth and Worcestershire Sauce: Pour beef broth and Worcestershire sauce over the roast.
- Add Vegetables: Surround the roast with chopped carrots, potatoes, onion, and minced garlic. Add thyme and rosemary on top.
Cook the Chuck Roast
- Slow Cooker: Cover and cook on low for 8 hours or until the meat is tender and easily shreds with a fork.
- Oven Method: Preheat your oven to 300°F (150°C). Cover the Dutch oven and roast in the oven for 3-4 hours, until tender.
- Prep Time: 15 min.
- Cook Time: 8 hours (slow cooker) or 3-4 hours (oven)
