For the Squash:
- 2 medium acorn squashes
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of 1 lime
- Zest of 1 lime
- Fresh cilantro for garnish (optional)
Instructions
Prepare the Squash
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut the Squash: Carefully slice the acorn squashes in half and scoop out the seeds.
- Season the Squash: In a small bowl, mix together the olive oil, chili powder, smoked paprika, garlic powder, salt, black pepper, lime juice, and lime zest. Brush the mixture over the cut sides of the squash.
Roast the Squash
- Place on Baking Sheet: Place the seasoned squash halves cut-side down on the prepared baking sheet.
- Bake: Roast in the preheated oven for about 30-35 minutes, or until the squash is tender and easily pierced with a fork.
- Garnish and Serve: Remove from the oven, flip the squash over, and sprinkle with fresh cilantro if desired. Serve warm!
