Instructions
Prepare the Dough
- Activate the Yeast: In a small bowl, combine warm water, yeast, and sugar. Stir to dissolve the yeast and let it sit for about 5-10 minutes until it becomes frothy. This shows the yeast is activated and ready to go.
- Mix the Dough: In a large bowl, combine the flour and salt. Add the activated yeast mixture and vegetable oil. Stir until the dough begins to come together, and then knead the dough for about 5-7 minutes, until it’s smooth and elastic. If you have a stand mixer with a dough hook, this will make the process even easier.
- Let it Rise: Lightly oil another bowl and place the dough in it, covering with a clean towel or plastic wrap. Let the dough rise in a warm place for about 1 hour, or until it doubles in size.
Shape the Pretzel Bites
- Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Boil the Dough: Bring a large pot of water to a boil. Add the baking soda to the boiling water—this will give the pretzel bites their distinctive texture and golden color.
- Shape the Dough: Once the dough has risen, punch it down and divide it into 8 equal portions. Roll each portion into a long rope about 1/2 inch thick. Cut each rope into bite-sized pieces (roughly 1 inch long).
- Boil the Bites: Carefully drop the dough pieces into the boiling water in batches. Boil them for about 30 seconds, then use a slotted spoon to remove them and transfer them to the prepared baking sheet.
Bake the Pretzel Bites
- Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the pretzel bites are golden brown.
- Brush with Butter: Once baked, immediately brush the warm pretzel bites with melted butter and sprinkle with coarse sea salt. If you’re using a cinnamon-sugar mix, sprinkle it on while the bites are still warm for a sweet finish.
