For the Dish:

  • 1 lb (450g) sausage (your choice: pork, chicken, or turkey)
  • 2 cups butternut squash, peeled and cubed
  • 2 medium apples, cored and sliced (preferably Granny Smith or Honeycrisp)
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

Prepare the Ingredients

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Cook the Sausage: In a large skillet over medium heat, add the sausage. Cook until browned, breaking it up into crumbles as it cooks, about 5-7 minutes. Remove from the skillet and set aside.
  3. Sauté the Vegetables: In the same skillet, add olive oil, chopped onion, and cubed butternut squash. Sauté for about 5-7 minutes, or until the squash starts to soften.
  4. Add Apples and Seasonings: Stir in the sliced apples, thyme, cinnamon, salt, and pepper. Cook for another 5 minutes until the apples soften slightly.
  5. Combine Ingredients: Return the cooked sausage to the skillet, stirring everything together.

Transfer and Cook

  1. Transfer to Baking Dish: Pour the mixture into a greased baking dish, spreading it evenly.
  2. Cook in Oven: Cook in the preheated oven for 25-30 minutes, or until the butternut squash is tender and the flavors meld together.
